Max Strikes it Rich

Of all my recipes, this chicken bowl dish is my favorite. With only a short preparation, this chicken and sweet vegetables will not disappoint.
12 oz. chicken breast 
2 teaspoons canola oil
1 clove minced garlic 
2 medium sweet potatoes peeled and diced
2 cups chopped fresh kale
Cut chicken breast into 1 inch cubes, and season with salt and pepper
Heat 1 tablespoon of oil with chicken in skillet for 8-10 minutes 
Add the garlic and vegetables to the same skillet along with the remaining canola, and cook for another 5-7 minutes
