Max’s Best Grilled-Cheese Ever

Grilled special a la Max! (Max Walker/Staff)
 
One of the most iconic dishes is the grilled cheese sandwich. However, this grilled cheese is on a new level. It incorporates several tastes to make a masterpiece, and while it takes more effort it is so worth it!
 
Ingredients:
 
1/4 cup grated Gouda cheese 
 
1/4 cup grated white cheddar cheese
 
Tablespoon of mayonnaise 
 
Assorted peppers and onions 
 
Tablespoon of butter 
 
Kosher salt
 
Black pepper
 
1/4 inch cuts of sourdough bread
 
Steps:
 
1. Saute vegetables with salt and pepper until brown
 
2. Spread layer of mayonnaise onto bread. Put on griddle mayonnaise
    side down. Cooking for 2-3 minutes on medium
 
3. Remove both bread and peppers and assemble cheese, peppers,
    onions, and bread into a sandwich
 
4. Spread mayonnaise on outside of bread. Sear on griddle until the
    cheese melts to the surface.
 
5. Enjoy!
